我所认识的福山帮与鲁菜

<p>鲁菜,是由福山菜、济南历下菜、孔府家宴菜构成的我国八大菜系之一。而鲁菜又主打海鲜,所以福山菜更是在全国出名。</p><p>福山人善烹饪,足跡遍布京城、济南等各地,从古至今,形成了″福山帮",许多有名的鲁菜馆百分之八九十是福山帮在经营。</p><p>九十年代末至二000年代初,我在我们单位培训中心工作了四五年,当时我们聘的厨师长、厨师都是福山人,而且都是厨师长带来的″福山帮",我与他们有幸打了几年交道,受益匪浅。</p><p /></p><p>九十年代是全国餐饮业最兴旺的时期,也是好厨师最吃香的年代。我们单位这个″福山帮"是公开招聘来的,之前他们是在济南某大饭店干,厨师长姓赵年纪轻轻不到四十岁,一副精明能干的样子。</p><p>当时他带来了三个厨师、两个打荷,两个面案共八人,其中四个人是烟台商校毕业的,清一色年轻人,都是福山老乡离家也不远。</p><p>那时候我们单位在北岛还是独一家,华宇、东方明珠还未建成,又和东边的莱福士船厂比邻,生意还是比较兴隆。</p><p>他们的到来,很快使我们培训中心的名声大噪,包括市里的大批食客都慕名而来。那时每年在烟台召开的全国煤炭订货会或化工订货会许多重要的宴会都破天荒的来到这里,更不用说客房都爆满了。</p><p>当时我分管攴厅,感觉这″福山帮"非常团结,有魄力、肯学习,创新能力强。</p><p>首先我认为这食材采购是他们烹饪菜品好坏的第一关键。</p><p>当时我和厨师长连续半年每天早晨天不亮就到环海路海鲜批发市场食材采购,</p><p /></p><p>每天要根据当日订座的来客以及散客的大体数量采购食材,绝对要确保新鲜,并根据订座客人的身份、地位配备相应的食材。如莱福士船厂的高级外聘工程师都是外国人,他们每天固定在我们中心8~10桌,不仅中餐的海鲜绝对要保证是鲜活的,还要保证西餐各种食材的准确,一丝都不能马虎。还有天津中海油船舶监造组每天固定在10桌左右,食材釆购量很大。</p><p>如果逢上婚宴,这食材准备干货得半月前就得备好,喜主自带的海参一周前就要发上,余量、备份必须充足,其它鱼、虾等海鲜一周前到位。</p><p>第二,鲁菜传统经典在他们手上得到了发扬光大。</p><p>传统的经典鲁菜是根本是灵魂,但其实还是一个店一个味道各有千秋。</p><p>当时我们店的象葱烧海参、糟溜鱼片、糟溜三白、九转大肠、糖醋鲤鱼、糖醋里脊、溜腰花等等</p><p /></p><p>四喜丸子</p><p>不仅很好的得到了传承,而且还得到改善,如果是江浙沪一带南方人来吃口味给它偏甜偏淡,如果是川渝湖南一带就偏点麻辣,鲁菜在他们手上转手变成了鲁菜与粤菜、川菜的结合体,这一改良,就连烟台夲地的食客也大呼好吃不一样。</p><p>第三,不墨守陈规敢于大胆突破创新。年轻人不仅敢想敢干还喜欢创新。</p><p>那几年,他们根据我们国外、南方、北方、内地、客人都有的特殊情况,几乎每隔三、五天就能推出或改良一个新菜,比如上海人和广东人喜欢吃红烧鳝丝,在黄鳝食材紧缺的时候他们推出了葱烧黄、白鳝丝,一半黄鳝和一半海鳝用葱烧海参的做法,结果大受欢迎。另外一道普普通通的“四喜丸子"经过改良,共十三种食料烹制而成,与其它饭店的相比口味高出一大截,当时是我们办婚宴最拿手和出名的一道菜。</p><p>经过和他们几年的相处,让我确实感到福山人的″嘴"上的功夫确实是名不虚传,他们不仅人品好,手艺好而且善于学习和创新,这不仅使我们经典的鲁菜得到传承,并且更好的得到了发扬光大。</p><p>
